Job Summary
We’re seeking a reliable, high-energy Dishwasher/Prep Cook to maintain a spotless kitchen while prepping for our signature menu in a busy, fast-paced environment. This hybrid role balances dish pit duties with hands-on prep to keep service flowing smoothly. Key Responsibilities
Dishwashing & Sanitation (~50–60% of shift)
• Run the commercial dish machine efficiently to wash, sanitize, and dry dishes, glassware, utensils, woks, pots, pans, and equipment.
• Collect and sort soiled items from the line, prep areas, and front-of-house during rushes.
• Maintain a clean, organized dish station: sweep/mop floors, clean walls/sinks, empty trash, and handle proper chemical/sanitizer use.
• Complete thorough closing routines: break down machine, deep clean areas, and set up for next shift.
• Adhere strictly to health codes, temperature checks, and food safety standards.
Food Preparation & Kitchen Support (~40–50% of shift)
• Prep fresh ingredients for fusion dishes: wash/peel/chop/slice/dice veggies (e.g., for stir-fries, Sichuan green beans), proteins, herbs, sauces, marinades, garnishes, and mise en place.
• Portion items, mix sauces (e.g., ginger soy hoisin, Mongolian), prepare batters, salads, and station setups.
• Support line during service: restock essentials, assist with quick assembly of noodles/stir-fries/signature items.
• Receive/inspect deliveries, use FIFO rotation, label/date prepped items, and organize storage (walk-ins, reach-ins, dry goods).
• Help keep the entire kitchen clean, organized, and efficient.
Qualifications & Requirements
• Restaurant BOH experience (dishwashing, prep, or similar) preferred; motivated beginners welcome—we train!
• Physically able to stand for long shifts, lift 50+ lbs, and work in a hot/fast kitchen.
• Dependable team player with strong attention to detail and positive attitude.
• Knowledge of basic food safety (ServSafe/food handler cert a plus, or we’ll help you get it).
• Available for ~45 hours/week full-time schedule: flexible but must include evenings, weekends, and some holidays to cover our 11am–9pm (or noon–9pm Sundays) operations.
• Enthusiasm for Asian cuisine or eagerness to dive into our bold, family-recipe-driven menu.
